Complete dinner for 57¢

Grain, vegetables, leafy greens, and milk, under 500 calories, good nutrition, real food, whole food, good dinner for 57 cents.




In a pan:

1/4 cup barley (93¢/lb at Walmart) – 9 cents

1/2 cup water

1 stalk celery – 8 cents

1 small potato (4.5 ounces), cut up   5 cents  (potatoes 1.69/10 pounds)

1/4 onion – 6 cents

1/4 cup chicken stock – 0 cents.  You can use water if you don’t have stock. (The stock is virtually free if you count the cost of the whole chicken for the meat alone. )

1 oz carrot, cut up – 4 cents  (carrots 50¢/pound at Aldi)

I cooked that for about 20 minutes.  The entire meal took a total of about 25 minutes to make, most of that time spend doing other things in the house while waiting for the food to cook.  Maybe 5 or 10 minutes actual time in the kitchen.

With that dish, I had a cup of whole milk (13 cents) and a half cup (1 serving = 12 cents) of collard greens I cooked previously and froze.
